Does the Xperia 1 not have AOA2.0 support, specifically the audio over USB function?
I have a Sony MEX-GS820BT in my car, and audio over USB worked great with my old LG G6, giving noticeably better sound quality than audio via Bluetooth. When I try to connect the Xperia 1 via USB to the stereo, it just connects and disconnects repeatedly until the USB is disconnected. While in this state, the phone is practically unusable.

Yes it does,
HOWEVER: It not used to, however that is not the phone's fault that was actually the issue of the FIRMWARE on the external DAC.
USB AUDIO Player is just awesome sauce though..

I've been checking through the Android developer documentation, there is a way to check what USB features are available, and there are a couple of apps that claim to be able to do this too. So, I will check those and go from there.
Official word from Sony Support:
Regarding your inquiry about whether your Xperia 1 supports the Android Open Accessory 2.0, kindly be advised that All Xperia devices running Android 4.2 or later support the Android Open Accessories (AOA) 2.0 protocol.
Kindly note that Xperia devices without a 3.5mm audio jack do not support the AOA Audio protocol.

It seems that is the case. My problem is my Sony audio doesn't support Bluetooth. But strange or not - I had Xperia XZ. At first it was working with USB audio, then after some updates it stopped. I suspect it is possible coincidence, but may be connected. However, I liked Sony because of the lack of excuses " you don't need that" apple is bul**bleep**ing us all the time. If there is no freedom and multichoice with Sony, than I would just switch to an Apple device next time. Sadly, an era has come to an end for me, since I am Sony fan since the Ericson era and I had more than 6 Sony phones,I have Sony car stereo, Sony PS4, Sony smart TV, but maybe as I switched to iMac, I will also switch to iPhone. Sony Xperia 1 could be an awesome phone, if it wasn't for the strange decisions with some aspects. The top is this lack of AOA
However it is so strange some 3.5 mm audio jack headphones work with the adopter which is in the box(USB C to 3.5) or this is based on completely different tech
However it may be android version related issue, since I remember after updating my Xperia XZ Premium it lost the options of media transfer protocol in the menu where you select what to do with USB. I guess it was intended to drop, but I thought it was a hardware problem and this menu change was nothing. So they dropped it from the phones. I am pissed. Even my wife's iPhone Xs works with the SONY stereo
