high visibility color (colour) scheme

I find my laptop screen a lot easier to read in sunlight if it is black charatcters on a white background

Is there any way of changing the phone colour scheme similarly, esp phonebook, dialling, sms, calendar

Not on the standard phone unfortunately.

You can download apps from the market for most of the things in your list, I use Handcent for SMS, K9 for email, Jorte for my calendar.  Don't use a dialler tbh my calls all seem to be to one of my contacts for which I use Gesture search.
