I am not from the United Kingdom, I am from New Zealand, but I cannot register my eReader because there is not a New Zealand option in the countries listed. Is this going to stop me from downloading eBooks etc onto my eReader?

You should be able to register your Reader at Sony NZ.  Click on Register in the top bar here:-
